i know that the anim is melee knife stick, the one i wanna change but how? i export the models of viewhands and knife and after in maya how do i animate it, with the rigs? for example while animating a gun youve got,  some squares with parents to hands and all that to make it easyer, i tryied, exporting the anim with toms tool, but its bugged, the hand of the player is separated to the arms. What I really want is, the process of making the anim how do i do it?? (ive got maya knowledge, for makign for example a custom gun, and animating and all that, but dunno how to do that :P)

Just open the rig and animate that hands. The COD4 rig has a knife in the scene you can use for reference as the engine attaches the knife to one of the tags on the hands during the knife animation. Then just import it like you would with any other animation.

depends if the knife is attached to the hand correctly. For ease of use I would just use COD4.

Well not just defmesh, use the rig with the controllers, not just the rigged arms. Then it should work properly yes.
