well depending if you are using harrys perk system or not there are 2 different ways.....

using harrys perks : go to mods/YOURMODNAME/maps/_zombiemode_perks.gsc
and look for start pistol or anything that says start pistol then change the name of the original start pistol to your one of choice

and

without harrys perks :
